Gluten Free Waffles

My brother was just telling us about a good gluten free waffle recipe, so when I wanted to make waffles last night, I got the recipe.  As soon as I saw the recipe, I figured they would be good, because it is very similar to the recipe I usually use . . . and we love them!

2/3 cups oats*
2 cups buttermilk
2 eggs
1 1/3 cup gluten free flour*
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
½ cup butter, melted

Put oats soaking in buttermilk.  Separate eggs.  Double sift flour, baking powder, baking soda and salt and add to buttermilk/oats, egg yolks, and butter. Whip up egg whites and fold into batter. Do not over mix.

*If oats can not be used, use ½ cup cornmeal and 1 ½ cups gluten free flour.

I made these using oatmeal and Mama's Almond Blend GF flour.  David really liked them.  I took just a bite and liked them, too.
