Gluten Free Waffles

My brother was just telling us about a good gluten free waffle recipe, so when I wanted to make waffles last night, I got the recipe.  As soon as I saw the recipe, I figured they would be good, because it is very similar to the recipe I usually use . . . and we love them!

2/3 cups oats*
2 cups buttermilk
2 eggs
1 1/3 cup gluten free flour*
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
½ cup butter, melted

Put oats soaking in buttermilk.  Separate eggs.  Double sift flour, baking powder, baking soda and salt and add to buttermilk/oats, egg yolks, and butter. Whip up egg whites and fold into batter. Do not over mix.

*If oats can not be used, use ½ cup cornmeal and 1 ½ cups gluten free flour.

I made these using oatmeal and Mama's Almond Blend GF flour.  David really liked them.  I took just a bite and liked them, too.

Crafter's Weekly - week 10 . . . and more!

I'm joining in with Aimee this week for Crafter's Weekly.  We were supposed to make a card with something stamped on it.  On the 10th we had our annual scrapbook retreat.  On the swap table I found a couple sets of neat looking stamps.  I was able to use one of them on my card.  I actually stamped the left side and then inked part of the stamp to add another "branch" to the right side.

Since our retreat a week ago, we've been doing lots of scrapbooking.  I've been working on cards.  Here is my little stack of 16 of them.

Bronwyn got to go to the retreat with us to help with Morgan.  One of the kind ladies there gave her some stuff to work with . . . and she got a pile that was left on the swap table!  She's been busy working ever since.  "Mom, I made 4 cards already."  "Mom, I made 9 cards now."  "Mom, you still have more cards than me."  Here she is letting Forrest do some stuff, too.

Aimee is the other one who's been scrapbooking with me.

I halfway put my stuff away and will be working on something different this week for our April sale.

Our Baby is 11 Months Today!!

Our little darling Morgan is 11 months old today.  (By the way, I took too long to write this, so my info is incorrect.  The 17th is the correct date.)  She is such a sweetie . . . and sooo smart:)

Bronwyn has turned into her little mommy.  Reid told me a couple days ago if I want Bronwyn to come and she won't, just make Morgan cry and she'll come running!!!  Seriously, that's just about the truth!

Tonight Aimee and I set things up to take some pictures of her.  Aimee actually took the pictures.  Morgan sat there and cheesed most of the time.

You're probably beginning to recognize this shirt as well as I!  I must not have very many cute shirts for Morgan.  I just noticed she wore this in her 9 month pictures as well as the one's I had done when she was about 7 1/2 months:)  Really, these are just the clothes she was wearing today, so I hadn't especially planned for pictures . . . that's my excuse:)

In other news, I went garage saling yesterday and today for the first times this year.  I thought I did fairly well, although Aimee scored the most!  My best purchase this morning was this coat I got for Hunter.  I think it will be the most liked item!  I brought it home and washed it.  When it was all clean, I called Hunter to me and gave it to him.  I told him it was a new "outside" coat.  Later he told one of the girls that he thought he would keep it for an "inside" coat!!!  Literally, I don't think he took it off from the time I gave it to him until I gave him a bath.  When he got all dressed in his PJ's, he found his coat and put it back on!!!
